Got some leftover pork after making our Crispy Eisbein? These simple, quick and easy crispy pork croquettes are the perfect way to upcycle your leftovers into a delicious starter.
We paired ours with Sutherland’s Riesling and it was perfect!
Serves 4
250g of leftover Eisbein or gammon chopped
2 tablespoons of plain cream cheese
2 tablespoons of Dijon mustard
1 cup of Panko crumbs or plain bread crumbs
Canola or sunflower oil for frying
Place the chopped pork, cream cheese, and mustard in a food processor and pulse until smooth.
Form the mix into round balls and then roll them into the crumbs.
Heat the oil in a pan and fry the croquettes until crispy.
Drain on a paper towel, plate and top them a dollop of extra mustard.
Serve it with a leafy avocado salad and a delicious glass of Riesling.
